2 lbs peeled shrimp (of course, I added scallops too)

Marinade
1 C Kahlua
1 1/2 C honey
1 1/2 C (Lou Anna) peanut oil
2 bottles of Tiger Sauce (sometimes hard to find; last found it at Walmart of all places)
2T seasoned salt
2T chopped garlic
2T chopped parsley
2T hot pepper sauce
2T chopped basil
2T chopped thyme
2T chopped parsley

2T Worcestershire sauce
4C beef stock
3T chopped red pepper

1 lb angel hair pasta

2-3 tomatoes (grill for garnish)


Directions:

1. Combine ingredients for marinade and marinate seafood for hours (or overnight)
2. Grill seafood over charcoal fire with mesquite and hickory wood (if you have it)
3. Heat the Worcestershire sauce, beef stock, and red pepper.
4. Add cooked pasta to this.
5. Serve seafood over the angel hair pasta. Garnish with extra cilantro and grilled tomato.

I always heat the marinade and serve on the side. Not sure this step would pass a health code, but I love it. So did Meg. As an aside, Meg definitely enjoyed recipes like this. However, she also greatly enjoyed super simple meals with friends. One of the dinner parties she raved about at our house was a work night St. Paddy's Day dinner where I made grilled corned beef sandwiches, a salad, and a served a wide assortment of individual bags of chips. Friday nights were the best if we ordered Chinese or went to O'Donoghue's for a fish fry and Jamie Wings. Meg, of course, had shrimp!
