Roasted Sweet Peppers Recipe

Sweet peppers (Green, Red, Yellow) - sliced
EVOO
Salt
Garlic powder

Directions:

Use as many peppers as you want.

Heat up some EVOO in a cast iron pan (very important for best results, but if you don't have one any heavy pan will do). Add the peppers, salt and garlic powder to taste.

Cook on a very high heat until the peppers start to brown in spots, stirring occasionally. When done, turn off heat (pan will still be flaming hot) and add 1/2 c water. Put a lid on the pan right away and let steam for 10-15 minutes.

These are great as a complement to Italian Roast Beef sandwiches or Meatball sandwiches.
