Potato Soup


Ingredients:

At least 8 russet potatoes peeled
1 cup onion
1 cup celery
1 recipe White Sauce (see page 52)
1 cup flour
1 egg
Salt
Pepper
Chopped fresh parsley, optional

Directions:
Directions:
Put whole potatoes in a soup pot just barely covered with water and cook until fork tender. Do not drain. Mash lightly with hand masher, leaving them chunky. In separate saute pan, cook onions and celery until soft, then add to the potatoes. Make White Sauce recipe. Pour that over potatoes, onions and celery then season with salt and pepper to taste. Let that simmer on the stove. Do not let it boil. Mix flour and egg in a separate bowl until you have a lot of crumb balls of dough. Season with a little salt. Sprinkle over the top of the soup and stir a little. Add chopped parsley for a little color. Put a lid on and cook for about 10 more minutes. That'll be good!
