1 lb. boneless, skinless chicken breast
1+ teaspoon vegetable oil
2 tablespoons lemon juice
3/4 cup mayonnaise
1 teaspoon salt
1/2 teaspoon Accent
2 cups chopped celery
4 hard boiled eggs
1 cup grated sharp cheddar cheese
3/4 cup cream of chicken soup (undiluted)
1 teaspoon minced onion
2 pimentos (cut fine)
2/3 cup chopped and toasted almonds
1 1/2 cups crushed plain potato chips

Preheat oven to 400º F.

Heat vegetable oil in a medium skillet over medium heat. Add chicken breast and cook completely, flipping and stirring often. Cut chicken breast into small, bite size chunks before, during or after cooking. When cooked through, remove from heat, drain and set aside.

Put potato chips in a sealable plastic bag and crush with hands. Set aside.

Use a sharp knife to chop celery, hard boiled eggs, onion and pimentos into smaller than bite size pieces. The onion should be minced, and about half as small as the other ingredients.

In a large mixing bowl, combine chopped ingredients (except for the hard boiled egg), chicken chunks, lemon juice, mayonnaise, Accent and chicken soup. Mix well with a spatula or long spoon. Once the ingredients are almost completely blended, add chopped hard boiled egg.

Make sure the ingredients have all been combined well before turning out into the bottom of a 7 x 11=inch casserole dish.

Top the chicken salad mixture with cheese, toasted almonds and crushed potato chips before baking at 400º F for 20-25 minutes.
