1 3-4 lb eye of roast
1 T cracked black pepper
1/2 tsp thyme
1 T garlic powder
1 T onion powder
1 tsp coarsely ground salt
1/4 tsp crushed rosemary

Directions:
Directions:
Preheat the oven to 500F. While it is preheating, combine all the spices. Rub all of the seasonings on roast to coat thoroughly. Place in a casserole dish fat side up. Put meat in the oven. Reduce temp to 475F. Cook meat for 7 min per pound. Once it is finished shut oven off Do NOT OPEN DOOR. Leave in oven for another 2 1/2 hours.
