Brushetta:
6 Roma tomatoes, seeded and diced
1 yellow bell pepper, seeded and diced
10 scallions, sliced
Fresh basil, chiffonade, approx 1/4 c
2 tsp dried oregano
1 tsp sea salt
1/2 freshly ground black pepper
2 Tbsp fresh lemon or lime juice
2 Tbsp olive oil
1 clove garlic, minced
2 tsp freshly grated lemon or lime peel
1 Tbsp Balsamic vinegar

Toast:
Fresh crusty bread, sliced
Olive oil
Italian seasoning (grinder)

Directions:
Directions:
Combine all brushetta ingredients, refrigerate.

Combine oil and seasonings in shallow pan. Coat both sides of bread. Broil or toast over campfire.

Spoon brushetta over toast and drizzle with more basalmic.
