2 C all-purpose flour
1/2 C cornmeal
2 Tbs salt
2 Tbs dry mustard
2 Tbs paprika
2 Tbs garlic salt (I use powder)
1 Tbs celery salt
1 Tbs pepper
1 Tbs ground ginger
1/2 tsp dried thyme
1/2 tsp oregano
1 boiler-fryer chicken (2 1/2 to 1/2 lbs) cut up
cooking oil

Directions:

Combine all ingredients except chicken and oil. Place about 1 C flour mixture in a paper or plastic bag. Shake a few chicken pieces int he bag at a time, coating well. On medium-high heat 1/4 in of oil in a large skillet. Brown chicken on all sides; remove a large shallow baking pan. Bake, uncovered at 350º for 45-60 minutes or until done. Recipe makes enough coating for three chickens. Store unused mixture in an airtight container.

I got this recipe from Keith's mom. It is delicious. Anne' always asks for this for her birthday dinner. I omit some of the ingredients like celery salt and ginger (they aren't my favorite) and dip the chicken into an egg/water mixture before coating, but otherwise follow the recipe as above. I hope you all enjoy.
