Atkinson's White Self Rising cornmeal

Mix cornmeal with water making a consistency similar to cake batter. It is very hard to describe the exact stage you need, but you can always add more water.

Put about 1/2 inch of oil in skillet a medium high heat. Fry cornbread patties until golden brown and turn over.

Frying cornbread is an art that I never really mastered until about 20 years ago. My grandmother, Jessie Baker, would always fry cornbread for all of the holidays. But in her later years, as the families would arrive at her house for the holiday gathering, she would get so involved in greeting & talking with them that she would forget she was frying the cornbread and it would burn. So, since I lived the closest, I realized that I needed to go early and fry the cornbread so she could visit. So, I learned the art of frying cornbread because it would take about 1 hr. to fry enough to feed everyone.

It has now become a family tradition that I fry the cornbread at the holiday gatherings.
