For the Bread:
1/2 C. Unsalted Butter, room temperature
1 C. Sugar Cube
3 Eggs
2 tsp. Lemon Extract
Grated Rind of One Lemon
1/2 C. Poppy Seeds
2 C. Flour
1 C. Buttermilk
1 1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
Pinch of Salt
For the Syrup:
1/2 C. Sugar
1/2 C. Lemon Juice

Directions:
Preheat oven to 350º.

Grease and flour loaf pans

Cream butter and sugar for two minutes. Add eggs (one at a time), beating well after each egg.

Beat in extract, rind and seeds. Add one cup of the flour and beat well. Add milk, baking powder, baking soda and salt. Beat in remaining flour.

Bake for 35-45 minutes.

After bread comes out of oven, make the syrup by heating the lemon juice and pour in the sugar and dissolve.

Poke holes on the top of the baked bread and pour 1/2 of the syrup over the bread. Let sit for 5-10 minutes then turn over the bread and do the same to the bottom.
