Cracked wheat, tabouleh, or quinoa - 2 cups, prepared (follow pkg directions)
Roma tomatoes - 2 or 3, chopped
Cucumber - 1, peeled and chopped
Green onions - 1 bunch, thinly sliced
Green or red bell pepper -1, chopped
Parsley - 1 bunch, minced
Sliced black olive - 1/4 c

1/2 c olive oil
1/2 c fresh lemon juice
2 tsp salt

Chop all veggies and add to tabouleh. Mix in the olive oil & lemon juice. Marinate in the refrigerator for several hours.
