baking 4 pounds yellow zucchini squash
1 large onion
16 oz. sour cream
1/2 C mayonnaise
3 eggs
2 Tablespoons flour
2 C sharp cheese
1 red bell pepper
salt and pepper to taste
2 1/2 C saltine crackers
1/2 C butter
350 degrees

Directions:
Directions:
Wash and chop yellow zucchini in bite size pieces place in large pot of water. Cook 10 min just until tender. Drain well set aside. Chop and brown lightly onion and red pepper and set aside. Crack 3 eggs in a bowl beat well along with salt and pepper. After squash is drained well, place in a large bowl and mix in cheese, sour cream and mayonnaise mixture, onion, peppers and eggs. This can be made ahead and placed in refrigerator the night before. Crush 2 12 c crackers with 1/2 c butter set aside. Bake casserole, after 25 minutes of baking take out of oven top with cracker mixture and return to oven for the remainder of baking time.

Cook 35-40 min
350 degrees
