2 T onion, chopped
1 small can chopped green chilies
2 T butter
1 large can enchilada sauce
1 can cream of chicken soup
1 small can evaporated milk (5 oz.)
2 C chicken broth
1-1/2 dozen corn tortillas
1 stewing chicken, cooked and chopped
2 C grated longhorn cheese

Directions:
Directions:
Saute onions and chilies in butter. Combine all liquids and add to onion and chili mixture. Simmer to blend flavors. Break tortillas into pieces. Place in casserole in layers with chicken and cheese, ending with cheese. Pour sauce mixture over all. Refrigerate for several hours or overnight. Remove and bake in 350º over for one hour. Makes 6-8 servings.
