Ingredients:  
1 c. firmly packed fresh parsley
1 c. loosley packed fresh basil leaves
1/2 c. chopped onion
2 garlic cloves, chopped
1/2 c. olive oil
6 large tomatoes cut into 1/3 in. thick slices
1 tbsp. minced lemon peel

Directions:
Directions:
Finely chop fresh parsley, basil, onion and garlic in processor. With machine running, gradually add olive oil and blend until smooth. Season with salt and pepper. Arrange tomatoes on platter. Sprinkle with peel. Top each tomatoe slice with 1/2 tsp. pesto.

Let stand for 30 minutes at room temperature before serving.
