1 1/4 bups bulgar uncooked
1 1/4 cup boiling water
2 cups diced tomato
1 cup peeled, seeded and diced cucumber
3/4 cup chopped fresh parsley
1/2 cup diced yellow bell pepper
1/2 cup sliced green onion
2 tbsp chopped fresh mint
1/2 tsp salt
1/3 cup lemon juice
2 tbsp olive oil

Combine bulgur and boiling water in large bowl...stir well. Let stand 30 min or until water is absorbed. Add tomato and remaining ingredients: toss.
