Ingredients: 1 lb. shrimp 1 tbsp Olive oil ½ Lemon - juiced 1 c. White wine - (pinot grigio) 1 tbsp Garlic, finely diced ½ cup clarified butter - To make Clarified butter see below 1 tbsp. Parsley salt and pepper ¼ cup Parmesan Cheese, (finely shredded) ________________________________ ½ lb. (2 sticks) Unsalted Butter (for Clarified butter)

Directions:First: Make the Clarified Butter - 1- Cut the butter into smaller pieces and place it in a sauce pan. 2 - Melt the butter over low heat. 3 - Continue to cook until you don't see any more solids floating to the top. 4 - Remove the pan from the heat and use a spoon to remove the floating solids. 5 - Do the best that you can, but if you are unable to remove all of the solids it is OK. We will filter the remaining solids out later. 6 - Place a few layers of cheese cloth in a strainer to form a filter. 7 -Then pour the remaining liquid through the makeshift filter. 8 - Pour the clarified butter into a covered container and refrigerate for up to 2 months. You can use a mason jar, Tupperware or even a squeeze bottle. ----------------------------------------------------------------------------- Second: Make the Shrimp Scampi - 1 - Preheat the oven to 350 degrees Fahrenheit. 2 - Peel and de-vein the shrimp. I like the tails on for presentation, but you can remove them if you wish. 3- Arrange shrimp into a single layer in two shallow baking dishes approximately 4 inches by 5 inches. 4 - Any shallow oven safe dish will work. You may have to use less or more shrimp depending on the size. 5 - In a saute' pan over medium/high heat add the oil and garlic. 6 - Saute' the garlic for 2-3 minutes until is just starts to brown. 7 - Add the white wine and freshly squeeze lemon juice. 8 - Bring to a boil 9 - and then lower the heat and simmer. 10 - Reduce till about half. 11- Remove from the heat and add the clarified butter, salt, pepper, parsley and Parmesan cheese. 12 - Ladle the liquid over the shrimp. Fill till the shrimp are just barely covered. 13 - Place in a preheated 350 degree oven and bake for 7 to 12 mins until shrimp turn pink. The time will depend on the size of shrimp. 14 - If you want to have the shrimp slightly browned, transfer them to a hot broiler for 30 seconds before serving. Eat and enjoy! |
