3 large potatoes, peeled & diced
1 sweet onion, chopped
2 T extra virgin olive oil
2 whole heads of garlic, peeled & diced
5 cups chicken stock - or a little less, depending on the desired thickness

1/2 tsp salt
1/2 tsp pepper
1 T fresh thyme leaves, or 1 1/2 tsp dried thyme
1/2 cup heavy cream
Snipped chives for garnish

Cook potatoes until tender, drain. In a large heavy saucepan, over medium heat, sauté the onions in the olive oil. When the onions are translucent, add the garlic along with 1 cup of the chicken stock. Season with salt & pepper. Just bring to a boil, then quickly lower the heat & simmer gently for about 20 minutes, along with the added potatoes. When done, purée with an immersion blender. Add the remaining chicken stock until you get the desired thickness. Stir with a whisk and simmer for about 20 more minutes to blend the flavors. Whisk in the heavy cream at the end. Top with chopped chives. Serve with crusty bread.
