Lemon Ricotta Cookies Recipe

15 oz Ricotta cheese
2 eggs
3 T lemon juice
zest of 1 lemon
2 1/2 C flour
1 tsp baking powder
1 tsp salt
1 stick butter
2 C sugar

Glaze:
1 1/2 C powdered sugar
3 T lemon juice
zest of 1 lemon
Directions:
Directions:
Preheat oven to 375º.
Line cookie sheets with parchment paper.

Combine the butter and sugar.
Beat 3 minutes.
Add eggs, 1 at a time, beating until incorporated.
Add ricotta, lemon juice and lemon zest.
Beat to combine.
Add in dry ingredients.

Spoon dough (about 1 1/2 T) onto cookie sheets.
Bake 15 minutes, until slightly golden on edges.
Cool 20 minutes.

Glaze:
Combine the sugar, lemon juice and lemon zest in a small bowl and stir until smooth.
Spoon about 1/2 tsp onto each cookie ad use the bak of the spoon to gently spread.
Let glaze harden for 2 hours.
