1/2 lb Chèvre or other goat cheese
4 lg fresh figs or 1/2 c dried
1/4 c balsamic vinegar
3 T brown date sugar (plain brown sugar will also work)
4 cups arugula or spinach

Directions:
Directions:
Slice the cheese & put it in an oven pan.
Cut the figs into rounds.
Boil the vinegar & sugar. Lower the heat & let it simmer until the mixture is reduced & sticks to the back of a spoon.
If using dried figs, place them in the vinegar mixture & let them absorb some of the liquid while they cool.
Divide the salad greens evenly on 4 plates.
Heat the cheese slices quickly by broiling for about 3 minutes or until the cheese starts to melt.
Place a cheese slice on top of the greens on each plate.
Top with the candied fig mixture.
Serve warm.
