1 cup butter (room temp)
1/4 cup honey
1 tsp. pure almond extract

2 cups sifted flour
1/2 tsp. salt
1 cup chopped almonds
confectioner's sugar

Directions:
Directions:
Mix together butter, honey and almond extract.
Mix in flour and salt.
Once combined, mix in chopped almonds.
Roll into large ball, cover in plastic wrap and chill at least 4 hours.
Heat oven to 350º
Shape dough into 1" balls.
Place on uncreased cookie sheet,
Bake ago 10 - 12 minutes.
Cool at least 10 minutes
Roll in confectioner's sugar & roll again once completely cooled.

I find it helpful to line cookie sheets with parchment paper.
Cookies are very crumbly right out of the oven. Allow them to cool on pan before moving them.
