Rum cake Or (Amaretto cake)
1 c chopped nuts (maraschino cherries)
1 box yellow (chocolate) cake mix
1 3.75 Oz vanilla (chocolate) pudding
4 eggs
1/2 c water (juice from cherries)
1/2 c dark rum (amaretto) 80 proof
Glaze:
1/4 lb butter
1/4 c water
1 c granulated sugar
1/2 c dark rum (amaretto)

Directions:
Preheat oven to 325º. Grease and flour 10" tube pan or 12 c. bundt pan. Sprinkle nuts (cherries) over bottom of pan. Mix all cake ingredients and pour into pan. Bake 1 hour. Cool. Invert on plate. Prick top and glaze.

Glaze: melt butter over medium heat. Stir in water and sugar. Boil for 5 min, stirring constantly. Remove from heat and add rum (amaretto). Cool 5-10 minutes before spooning over cake. As it soaks in, add more glaze.

The rum cake recipe came from Aunt Judy. I invented the Amaretto version. Make sure to test the rum or amaretto before adding! Then test again!
