1 cup shortening
2/3 cup white sugar
2/3 cup brown sugar
2 beaten eggs
1 tsp. vanilla
1 1/2 cups all purpose flour
1 tsp. soda
1 tsp. salt
3 cups oatmeal
1/2 cup flaked coconut

Directions:
Directions:
Cream together shortening, sugars, eggs & vanilla.
Sift together flour, soda & salt. Mix into creamed ingredients.
Stir in oatmeal and coconut.
Using parchment paper or wax paper form dough into 3 to 4 long rolls.
Wrap tightly. Freeze until firm enough to slice - a least an hour.
Preheat oven to 350 º F
Slice one roll at a time in about 1/3 of an inch slices and place on a parchment covered baking sheet. Bake for 10 mins. until just golden.
Remove while warm onto cooling rack.
Store in airtight container. They should be crispie!

Coconut is optional, but I like it and adds to the texture.
Walnuts can be added and you can decorate top of cookies if for a special occasion. Chocolate chips or raisins would be other options to add, but I prefer them plain. These are old fashioned cookies like your Grandmother would make.
