1 1/2 cup sugar
1 1/2 cup cooking oil
4 eggs
1 1/2 cup gluten free flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
3 cups grated carrots

In large mixing bowl beat sugar and oil until blend. Add eggs one at a time, continue to
beat until smooth. Add dry ingredients and then carrots.

Pour into a greased 9 X 12 pan. Bake at 350. for 45 minutes, or until toothpick inserted into middle comes out clean.

Cool.

1/2 cup soft cream cheese
1/4 cup soft butter

Beat until smooth. Gradually add 2 cups icing sugar and cream until thick and spreadable.
