4 red bell peppers
2 Pablano peppers
3/4 cup good olive oil
1 Tbsp red wine vinegar
1 Tbsp balsamic vinegar
4 cloves garlic - minced
salt & pepper

Directions:
Directions:
Roast in oven on broil and turn often to get a nice char on the peppers. Place them in a paper bag as they are done, close and let rest for 1/2 hour. Mean while in a jar mix 3/4 cup good olive oil, red wine and balsamic vinegar, garlic and salt & pepper to taste (about 1 tsp each). Peel peppers, seed and cut. Add to oil mixture, if the oil does not cover the peppers, add more oil. Seal and shake to mix.
