5 lbs small red potatoes
8 eggs
1 green pepper
6 stalks celery
1 small red onion diced
11 oz jar Hellmans real mayo
1/3 cup dejon mustard
2 tsp salt
1 tsp pepper

Directions:
Directions:
Bring potatoes to a boil take cover off ad gently boil till done. Remove from water, cool and refrigerate while cutting vegetables.
Hard boil 8 eggs. Dice green pepper, celery, onion. Mix 1/3 cup mayo with dejon mustard and salt and pepper.
When peeled eggs and potatoes are cold, cube them in a large bowl and add vegetables. Add mayo mixture, Mix up nicely. Add salt mix again.
Sprinkle with paprika to look pretty.

Use as much Mayo as you need. I don't like a real soupy salad. You can add or use less to taste.
