Ingredients: 2 1/2 cups whole wheat flour 1 cup all purpose white flour 5 tablespoons toasted wheat germ 2 tablespoons dry instant oatmeal 1 tablespoon brown sugar 1 rounded teaspoon baking soda 2 teaspoons salt 2 tablespoons chilled butter, cut in to pieces 2 cups buttermilk

Directions:Preheat oven to 425º. Butter and flour a 9x5x3-inch loaf pan* Combine first 8 ingredients in a large bowl; mix well. Add butter, rub in with fingertips (or a pastry blender) until mixture resembles fine meal. Stir in enough buttermilk to form soft dough (about 2 cups.) Transfer dough to floured service and knead just enough to form oval (or round.) Transfer dough to prepared loaf pan. Sprinkle a teaspoon of white flour on top of loaf. Flour a sharp knife and make a few diagonal slashes into the top of the bread. Bake until bread is dark brown and sounds hollow, about 40 minutes. Turn bread out on to cooling rack. Wrap in a clean dry towel and cool completely before serving.
*You can also bake the loaf in a free-form round or oval shape; just use a baking stone or sheet. |

Notes: I’ve been making some version of this bread for over 30 years, and this iteration is pretty foolproof for us. And the whole house smells wonderful when it’s baking...the scent that says ‘home” for the Daytons. Enjoy!
