Beat 1 c. shortening with 1 1/2 c. brown sugar. Add 2 eggs.

Mix in: 3 c. flour, 1 tsp baking soda, 1/2 tsp salt. Add 1 1/2 c. rhubarb and 3/4 c. coconut

Bake 350 11-15 minutes.

Frosting: 3 oz. cream cheese, 1 Tbsp oleo, 1 tsp vanilla, 1 1/2c. powdered sugar.

Can freeze. Frost after frozen.
