12 vanilla or gingerbread gluten free wafers(Mi-Del brand cookies)
2 8 oz. pkgs. cream cheese softened
1/2 cup sugar
2 eggs
1 tsp vanilla

Directions:
Directions:
Line muffin tin with foil liners. (Or small paper ones)

Place one wafer in each in each liner. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 mins at 325ºF

Remove from pan when cool. Chill. Top with fruit, cherry pie filling, nuts or chocolate.
