4-6 medium potatoes
1 medium onion, chopped fine
1 1/2 c. boiling water
3 tbsp. butter or margarine
2 - 3 c. milk
Salt & pepper

Directions:
Directions:
Pare and dice potatoes. Cook potatoes and onion in boiling water until tender.
Mash potatoes into water they were cooked in. Scald milk (start with 2 c. and add more if soup is too thick) and add along with butter, salt and pepper to potatoes and reheat.
Variation: Sliced smoked sausage, bacon pieces, raw chopped spinach, watercress, or parsley may be added to soup just before serving.
