2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
5 cups cubed (1/2 inch/1 cm) cored peeled Spartan apples

Directions:

In large bowl, beat together eggs, sugar, oil and vanilla. In separate bowl, whisk together flour, cinnamon, baking soda, baking powder and salt; stir into egg mixture to make stiff dough. Fold in apples.

Spread in parchment paper–lined 13- x 9-inch (3.5 L) metal cake pan. Bake in 350°F (180°C) oven until skewer inserted in centre comes out with moist crumbs clinging, 45 to 50 minutes. Let cool in pan on rack.
