1 tbsp olive oil
4 onions, chopped
6 cloves of garlic, minced
5 carrots, sliced
6 cups of vegetable stock
2 cans of cooked lentils, drained
2 large russet potatoes, peeled and chopped
2 bay leaves
1 tsp dried oregano
1 tsp dries coriander
1/4 tsp cayenne pepper
Kosher salt and pepper
1 tsp white vinegar

Directions:
In large soup pot over medium heat, warm the olive oil. Add the onions, garlic, carrots. Cover and cook until onions are soft, stirring often. About 10 minutes.

Add vegetable stock, lentils, potatoes and spice. Bring to boil, reduce heat and cover. Simmer until potatoes are cooked. Remove bay leaves.

Season with salt and pepper, and vinegar.
