Crispy Sweet Potato Fries and Sriracha Dip Recipe

2 large sweet potato's peeled
2-3 T cornstarch
1/2 cup mayonnaise
1/4 tsp cayenne
1 tsp Sriracha Sauce ( or more)

Directions:
Preheat oven to 425º
Cut sweet potatoes into fries not larger than 1/2 " thick. Soak in water for at least 1 hour. Drain in colander. Put Cornstarch in large zip lock bag and add sweet potatoes. Shake bag vigorously to coat all the fries. Lift fries out onto baking sheet(s) don't overcrowd or they will steam and not crisp up. Coat generously with olive oil tossing around until coated.
Bake for 15 minutes and check, once bottom of fries are browning, flip them over and cook another 5-10 minutes. You can also deep fry them.
Dipping Sauce:
Combine ingredients Adjust to your taste
Alternative: Use Adobo suace from chipotle peppers, if you like it spicy, chop up and adobo chili and add as well.
