6 cups shaved green cabbage (or slaw mix)
1 medium carrot peeled and shredded
1 c mayonnaise
3 T apple cider vinegar
1 tsp celery salt
1/2 tsp pepper
1/4 tsp powdered mustard
1/2 tsp poppy seeds (optional)
2 T Sugar
1 T olive oil

Directions:
Directions:
Shave cabbage very thin on mandolin or in food processor with grating or slicing blade. Place cabbage and carrot in a large bowl and toss. Combine remaining ingredients in a separate bowl and then add to cabbage and carrots. Cover and let sit in refrigerator for 1 hour to incorporate flavors. Stir and serve.
