4 cups flour
1 pkg dry yeast
1 tsp salt
1 1/2 cups warm water

Directions:
Directions:
Knead all ingredients together. Raise in a lightly oiled boil covered with a mopine (dish towel) in a warm place until doubled in size.

Cut and stretch into approximately 6 inch strips, about 2 inches wide and one inch thick. Deep fry in a pan (Gram always used her old cast iron one) in about 1 1/2 inches of vegetable oil.

Sprinkle warm pizza fritta's with sugar and enjoy!

These were always a favorite of mine. I think of them as the Italian version of a funnel cake. They are basically fried pizza dough. Cousin Rich Malozi and I actually planned to open a stand at Musikfest in Bethlehem years ago to sell them. Unfortunately the costs of insurance and Musikfest's percentage of sales led us to choose not to pursue. Who know's, maybe that will change some day! The world needs to taste these!
