1 box Cornbread mix (Trader Joes Jalapeno Bluecorn is good)
1# lean ground beef
1 C. frozen corn
2 cans black beans
1 can tomato paste
1 jar of your favorite salsa
1-1/2 cups shredded sharp cheddar or pepper jack cheese,
1 onion and 1 red or green bell pepper, diced

Preheat oven to 375. Brown meat & drain grease. Add bell pepper & onions, sauté until translucent. Stir in salsa, beans, tomato paste, and corn. Bring to boil; reduce heat & simmer, covered, about 10 minutes. Prepare corn bread mix according to package directions. Pour meat mixture into large baking dish, top with corn bread mixture. Spread evenly & bake for 14 minutes. Sprinkle with
cheese & bake for 10 more minutes.
