MEAT LOAF
1 tsp Beef-Flavor Instant Bouillon
1/4 cup Hot Water
1 1/2 lbs Ground Beef
3/4 cup Cracker Crumbs or Unseasoned Dry Bread Crumbs
1/2 cup Onion, chopped
2 tsp Dried Basil Leaves
1/2 tsp Garlic Powder
1/4 tsp Pepper
1/3 cup Ketchup
1/8 tsp. Hot Pepper Sauce
1 Egg, slightly beaten
CREOLE SAUCE
1 Green Pepper, chopped
1 Small Onion, chopped
2 oz. Can Sliced Mushrooms
2 tbsp Butter or Margarine
1 1/2 cup Tomato Juice
1 tbsp Cornstarch
Dash Hot Pepper Sauce
1/2 tsp Dried Thyme Leaves
Salt, if needed
Green Onion, chopped (optional)

MEAT LOAF
1. Heat oven to 350 degrees F.
2. In a large bowl, dissolve beef bouillon in hot water.
3. Add remaining ingredients for meat loaf, mix well.
4. Spoon meat loaf into ungreased 8 x 5 inch loaf baking pan.
5. Insert meat thermometer so bulb reaches center of loaf.
6. Bake at 350 degrees F. for 1 1/4 hours or until beef is thoroughly cooked in center, and meat thermometer reaches 160 degrees F.
7. Remove from oven and let stand for 5 minutes before slicing and serving.
CREOLE SAUCE
8. In the meantime, prepare the sauce.
9. Melt butter in saucepan.
10. Add green pepper, onion, mushrooms.
11. Saute for a few minutes, until onion is soft but nut browned.
12. In a bowl, mix cornstarch with a little tomato juice.
13. Add remaining tomato juice to pan with pepper- mushroom mixture.
14. Return to heat, and bring to boil.
15. Add cornstarch mixture from bowl to pan, stirring well.
16. Add pepper sauce, thyme leaves, and salt (if needed).
17. Sprinkle with green onion if you choose to.
18. Bring to a boil and boil for 2 minutes until sauce thickens.
19. Serve meat loaf with sauce and steamed rice or prepared pasta.
