Ingredients: 4 c all purpose flour 2 T baking powder 1 tsp baking soda 1 tsp salt 1 T + 1 tsp sugar 2/3 c butter (11 T) very cold cut into small cubes 1/4 cup melted butter 1 1/2 cups buttermilk, (you can make your own by adding 2 T lemon juice to measuring cup and adding milk to 1 1/2 c.)

Directions:Preheat oven to 450º Combine all the dry ingredients in a large mixing bowl. I measure my flour by carefully scooping the flour out and then dropping into the measuring cup and leveling off with a knife. Cut cold butter into dry ingredients with a pastry cutter. Make a well in the center and add buttermilk stirring until a soft dough forms. Transfer dough onto a floured board or surface and knead briefly, don't overwork the dough. Roll out to 1" thick. Cut with a 2" round biscuit cutter, when cutting biscuits it is important to press down and do not twist the cutter. Place on parchment or silicone mat lined large cookie sheet 1" apart. Gather dough gently and form into another round and cut more biscuits. I do this until I am down to enough dough to hand form the last biscuit. Brush tops with melted butter and bake until golden, about 10 minutes. |

Notes: These are my go to biscuits! Light, layered and tender. They are great whenever a biscuit is called for. Biscuits and gravy are a family favorite and always on the menu when anyone comes for an overnight stay!
