1/4 c butter
1/4 c flour
2 c warm milk
salt and pepper
1 tsp or MORE hot pepper suace
1/2 cup heavy cream
12 ounces sharp cheddar cheese, coarsely grated (grate your own, bagged grated cheeses don't melt reliably and the flavor is not as true)
3 ounces smoke Gouda cheese, coarsely grated
12-16 oz box of medium shells or elbow noodles, cooked and drained.

In a heavy saucepan, I use my large stock pot that I cooked the pasta in, melt butter. Add flour and stir with a wooden spoon or spatula for 3 minutes or until roux is frothy and has a little color to it.

Gradually whisk in the milk. Turn up heat and stir sauce until almost boiling and beginning to thicken.

Turn heat down and let simmer for a few minutes.

Add salt, pepper and hot pepper sauce. Don't be to shy with the pepper sauce, it really brings out the flavor of the cheese. Stir in heavy cream and let sauce simmer until flavors are blended. Stir in cheese by the handfuls and stir until melted.

Add macaroni to sauce and stir until completely coated.

A very dear friend put this in her cook book, it is a family recipe, and gave me permission to include it in mine! Thank you Sherri Meier! This has really become, hands down, a favorite of everyone who has had it. You know how young children often prefer the boxed versions to all the homemade versions? Well, That's not the case with this one. It satisfies both the young and discerning palate. I will never use another mac and cheese recipe.
If you really want a crunch factor go ahead and put in a casserole and top with buttered bread crumbs or ritz crackers, broil until browned. We like it from the stove top and that makes it a one pan dish!
