3 cups flour
1/2 tsp. baking soda
1 cup butter, softened
1 cup sugar
1 tsp. vanilla extract
1 egg
Colored sugar crystals or decorator icings, optional

Directions:
Directions:
Combine flour and baking soda; set aside. In large bowl, with electric mixer at medium speed, beat butter, sugar, and vanilla until creamy, about 5 minutes. Beat in egg until light and fluffy. Gradually blend in flour mixture. Divide dough in half; wrap in plastic wrap. Chill dough one hour.
On floured surface, roll out half the dough to 1/8 inch thickness. With floured cookie cutters, cut out cookies. Repeat with remaining dough, re-rolling as necessary. Place cookies on ungreased baking sheets. Sprinkle with colored sugar crystals if desired. Bake at 375º for 8-10 minutes or until light golden. Remove from sheets; cool on wire racks. Decorate with icings if desired. Store in airtight container.
