3 - 4 pound pork roast
Garlic cloves
6 sage leaves
1 tablespoon rosemary, chopped
Salt and Pepper
1/2 cup water
1 1/2 cups orange juice
2 tablespoons orange marmalade
4 teaspoons grainy mustard
2 tablespoons brown sugar
2 tablespoons orange juice
1/2 cup hot water
2 tablespoons orange liquer
Tabasco
1 orange for garnish

Dry the roast with paper towels. Poke holes in and insert garlic cloves, quartered.
Chop the sage finely. Remove rosemary needles from stems and chop well. Sprinkle the herbs on the roast and press firmly. Season with salt and pepper.
Preheat the oven to 300º. Put roast on a rack in a roasting pan. Add 1/2 cup water to the pan.
Roast for 1 1/2 hours.
Baste with the orange juice.
Continue baking until tender. About 1/2 hour before it is finished, Add more garlic cloves to the pan drippings.
Mix marmalade, mustard, brown sugar and 2 tablespoons orange juice. Baste with glaze about 5 minutes before the roast is done.
Save the pan drippings and mix with 1/2 cup water. Simmer until thickened.
Season with orange liquer, Tabasco and herbs. Decorate with orange slices.
