1 cup( 8 oz) unsalted butter
2/3c (21/2 oz) icing sugar
1 1/2 tsp vanilla
1/2 tsp salt
21/4 c ( 10 oz ) flour

Caramel Filling
22( 6 0z) caramels
3 Tbsp whipping cream

1/3 c (1 1/2 oz) finely chopped pecans

Turn oven on to 350.
Line two cookie sheets with parchment paper.
Beat butter, icing sugar, vanilla and salt on medium speed about 3 minutes. Add flour and mis on low speed for 1 min.
Using a 2 Tsp, scoop out 2 tsp of dough at a time. Using your palms roll into balls 1 1/4 "in diameter. Place on parchment 2" apart. Using back of 1/2tsp ,measure, press down middle of each ball to make a well. (almost as deep as the cookie mound. If edges crack then re-roll.
Bake one sheet at a time until cookies re dry and golden about 15-20 minutes on middle oven rack.

Caramel Filling: In a small saucepan, combine caramels and cream, Set pan over very low heat stirring(4-6min )constantly until smooth. Use a small spoon to fill the hole in the center of the cooked and cooled cookie.Scatter nuts over the caramel.
Can be made a month ahead and frozen.

The first time I made these was with some friend in Sydney. I was so excited that I was able to get some things made in advance of the Holidays. I proudly put my treats in the freezer !
The week before Christmas I was in the freezer checking on something and thought I should have a look at the beautiful cookies only to find my wonderful children had found them and put a good dent in my stash. I didn't kill them but ...I thought about it!LOL!
