1 sheet Pepperidge Farm frozen Puff Pastry Sheets
1 pound Brie Cheese
1 egg beaten w/1 tsp. sugar
Filling of your choice (Comstock apple filling, dash of cinnamon, handful of raisins)
(apricot jam, cranraisins)
(sliced mushrooms, bacon bits)
(cranraisins, chopped/spiced pecans)
(fig jam)

Thaw pastry 20 minutes. On a floured surface roll to a 15 inch circle. Preheat oven to 350 degrees. Slice Brie in half horizontally and layer filling in between the slices of Brie. I used cranraisins with spiced pecans in one, and mushrooms/bacon bits in the other. You can also use apricot preserves, fig preserves or any other fruit flavor or nuts you enjoy. Re-assemble and place in center of pastry. Brush pastry edges with egg wash and pull up sides to enclose Brie. Place seam side down on Parchment paper over cookie sheet. If desired, decorate top w/pastry scraps ( I use cookie cutters or make my own cutouts). Bake for 20 – 30 minutes, until pastry is golden brown. Let stand 10 minutes before serving. Makes 12 servings or you can eat it yourself with a bottle of chilled chardonnay.
