3 c beef broth
1 can kidney beans
2 c chopped onion
1 lg bell pepper chopped
1 cup salsa*
1 tsp cumin
1 1/2 c brown or long grain white rice
1 can stewed or diced tomatoes
1 lb of hamburger (optional)
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
If using, brown hamburger in large pot, drain fat, add stock and bring to a boil. add rice and bring back to boil, add remaining ingredients return to boil and then reduce heat and simmer 45 minutes or until rice is done.
Great with cornbread or a nice salad

*The heat of the salsa will determine the spiciness of the rice dish.
