1 recipe of Graham Cracker Crust
3 8oz packages cream cheese room temperature
1 c sugar
1 tsp vanilla
3 eggs
1 cup sour cream
2 tsp grated lemon peel

Directions:
Preheat oven to 350º
Pour graham cracker crust into 9 inch springform pan and press into bottom and half way up sides of spring form pan using a flat, round bottomed glass or measuring cup. bake for 20 minutes.

Cream together cream cheese, sugar and vanilla. Beat in eggs one at a time. Gently blend in sour cream and lemon peel. Pour into prepared crust. Bake 60-70 minutes until slightly jiggly in middle when shaken. You can also use a thermometer it should read 145-150 when inserted in the middle.
Turn oven off and cool in oven with door slightly ajar for 1 hour. Remove and let cool completely. gently run a knife between pan and crust sides. Release from Pan and gently slide onto serving plate.
Wrap and refrigerate at least 4 hours or overnight.

This is my go to cheesecake recipe. Don't over bake, it will be a little jiggly in the middle when shaken and will finish baking while cooling,
