Ingredients:  
1 small-medium head of cauliflower, chopped into florets
1 small yellow onion
1/2 cup of frozen peas
1/2 cup of carrots - cubed
2 eggs, beaten
1 tbsp sesame oil
1/4 cup soy sauce (low sodium)
1 tbsp light brown sugar
1/8 tsp ground ginger OR 1 tsp fresh ginger
2 tbsp green onions, chopped

Directions:
Directions:
Place cauliflower florets in food processor and pulse until it resembles rice; set aside.
In small bowl, whisk together soy sauce, brown sugar & ginger; set aside.
Heat a large skillet or wok over medium heat and add sesame oil.
Add onions, peas & carrots and saute about 2 minutes.
Slide veggie mix to one side of pan and add beaten egg to the other side, scrambling until cooked. Combine veggies & eggs.
Stir in cauliflower and add soy sauce mixture, mixing well. Cook an additional 4-5 minutes until cauliflower is slightly tender.
Top with green onions & serve.
