1 (2-3 lb) butternut squash - peeled, seeded & cubed
1 apple - peeled & cubed
2 tbsp unsalted butter
1 medium onion - chopped
6 cups chicken stock
Nutmeg
Salt & black pepper to taste

Directions:
Directions:
Melt butter in large pot. Add onion & cook until translucent, about 6-8 minutes. Add squash, apple & stock. Bring to a simmer & cook about 15-20 minutes, until squash is tender. Puree squash & apple in pot with immersion blender until soup has a smooth consistency and no chunks. Season with salt & pepper to taste. Serve in bowls & garnish with a light sprinkle of nutmeg.
