3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 1/2 tsp cinnamon
1/4 tsp cloves
3 eggs
1 cup canola oil or 1/2 cup & 1/2 cup applesauce
2 to 2/14 cup white sugar
1 tbsp vanilla
2 cups grated zucchini
1 cup chopped nuts

Grease & flour 2 8" x 4"pans. Preheat oven to 325º
Sift flour, salt, baking powder, soda, cinnamon & cloves together in a bowl.
Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted ingredients to the creamed mixture & beat well. Stir in zucchini & nuts until well combined. Bake 40-60 minutes or until toothpick inserted in center comes out clean.Cool in pan on rack for 20 minutes. Remove from pan & completely cool.

I love the taste of the cloves in this recipe, you can go a smidge over the 1/4 tsp. If you are not a fan of cloves, I would up the cinnamon to 3 tsp. I shred and freeze zucchini in freezer bags during zucchini season, then I have it ready when the zucchini bread mood strikes.
