9 - 9&1/2 cups flour
1&1/2 cups sugar
2 sticks of butter
6 egg yolks
2 tsp. salt
2 cups. scalded milk
2 pkg. dry yeast
2 tsp. lemon rind, grated
1/2 tsp. mace
1/2 cup blanched slivered almonds
1 cup golden raisins, plumped (place in water & bring to boil & let sit until plump)

Scald milk, cool to Luke warm. Soften yeast in 1/2 cup warm water with 1&1/2 tsp. sugar. Let stand 10 minutes.
Cream butter, add sugar, salt & egg yolks & lemon rind, mace, raisins, & nuts.
Beat until smooth, add 1 cup of flour, mix well.
Stir in softened yeast mixture, beat well.
Add cooled milk alternately with remaining flour to butter mixture, beating well after each addition.
Knead with a wooden spoon in large bowl or conventional way until air bubbles form.
Let rise.
This may take 2 + hours.
*A good trick is to turn your oven on 400º for 1 - 2 minutes, turn oven off & place bowl with plastic wrap as cover, & a damp towel over this in the oven to rise.
When dough is ready, it may be divided into 3 medium or 2 large Hoskas.
If it is divided in 3, take each piece & cut in 4 equal portions.
Braid 3 of these for the main part of the Hoska.
Divide the 4th piece into 3 parts & braid these for the top of the main part of the hoska.
Pinch in place, place on hoska some almond halves & brush with 1 egg yolk mixed with 1 tbs. of milk.
Bake at 300º - 325º from 30 - 45 minutes.
