2 cups black beans
1 onion, finely chopped
2 carrots, chopped in small cubes
2 tomatoes, chopped
1/8 c. parsley, finely chopped
2 tsp sugar
3 tbsp. olive oil
2 c. water
1 lemon, cut in wedges
Salt and freshly ground black pepper to taste

Boil water & add beans. Partially cover & simmer for 30 minutes. Drain and rinse the cooked beans under cold water & set aside. Sauté onions for 3 minutes, then add carrots, tomatoes, beans, & sugar. Mix well & add salt & pepper to taste.
