4 T lemon juice
1-2 T coarsely ground black pepper
3 T mayonnaise
2 T white or yellow miso paste
4 tsp Dijon mustard
1/8 tsp cayenne pepper or to taste
4 8-oz center-cut salmon fillets about 1 1/4" thick, boned with skin on
Sea salt to taste

Whisk together lemon juice, pepper, mayonnaise, miso, mustard and cayenne in a small bowl. Reserving 2 T, spread mixture over fillets on a plate. Cover with plastic wrap and refrigerate 30 min.

Preheat oven to 450º. Line a rimmed baking sheet with parchment paper or a silicone baking mat.

Transfer fillets to prepared baking sheet and spread reserved lemon-pepper mixture evenly on top of fillets (do not let pool around base). Sprinkle with sea salt. Bake until salmon just flakes with a fork, 10-15 minutes.
