1/3 c olive oil
2 c firmly packed fresh basil leaves
1/2 c pine nuts, toasted
2-4 chopped garlic cloves
3/4 c grated Parmesan cheese

Directions:
Directions:
In food processor, combine 1/3 c olive oil, basil, nuts, garlic and 1/4 tsp. kosher salt. Process until nearly smooth, scraping sides as necessary. Stir in Parmesan. Add enough olive oil to reach desired consistency. Makes 1 cup.

To store: Cover surface of pesto with plastic wrap and refrigerate up to 1 week.
